White Peppercorns are actually just black peppercorns with the outer shell removed. They are milder in flavor and aroma but their sharpness and pungency is much greater then that of black pepper. Use them in dishes such as cream sauces or mashed potatoes where you do not want black flecks, or in any dish where you want their sharp flavor to shine through.
