CREAM OF TARTAR

Cream of tartar is an acid, specifically tartaric acid and is a byproduct of wine production, It stabilizes egg whites and whipped cream, is an anti-caking and thickening agents, as well as having the capability to reduce the discoloration of boiled vegetables.  Fun fact: mixing baking soda and cream of tartar creates baking powder.
