The outer part of the orange peel has been dried to capture all of the essential oils of the orange which possess a highly fragrant and potent citrus flavor. This dehydrated mined orange peel can be used as-is, just substitute 1/3 for the amount of fresh orange peel needed. It can also be re-hydrated by adding three parts water and letting stand for 15-20 minutes. Try adding to desserts such such as cheesecakes, cookies, scones, breads, biscotti, and cakes.
