Lentil and Sausage Soup

Ingredients
1 lb. sweet Italian sausage
2 large onions
2 tbsp minced garlic
2 lbs. dry lentils
4 cups potatoes (2 pints canned)
1 can diced tomatoes, 796 ml
2 beef broth 900 ml
Approx. 6 cups water, or to fill pot
1/3 cup Troyer’s Soup 9 Spice
Directions
- In a skillet, brown sausage. Add onion and garlic. Sauté for 5 minutes.
- in a large stockpot, place ingredients in order: lentils, potatoes, sausage, garlic, onions, tomatoes, bay leaves.
- Add spice mix.
- Add all liquids and stir.
- Heat on medium high until boiling, stirring often.
- Cover and reduce heat to a simmer. Simmer 3 hours or until lentils are soft.
- Add water as needed.
