Lentil and Sausage Soup

Ingredients

  • 1 lb. sweet Italian sausage

  • 2 large onions

  • 2 tbsp minced garlic

  • 2 lbs. dry lentils

  • 4 cups potatoes (2 pints canned)

  • 1 can diced tomatoes, 796 ml

  • 2 bay leaves

  • 2 beef broth 900 ml

  • Approx. 6 cups water, or to fill pot

  • 1/3 cup Troyer’s Soup 9 Spice

Directions

  • In a skillet, brown sausage. Add onion and garlic. Sauté for 5 minutes.
  • in a large stockpot, place ingredients in order: lentils, potatoes, sausage, garlic, onions, tomatoes, bay leaves.
  • Add spice mix.
  • Add all liquids and stir.
  • Heat on medium high until boiling, stirring often.
  • Cover and reduce heat to a simmer. Simmer 3 hours or until lentils are soft.
  • Add water as needed.
