Butter Chicken

- 6 tbsp butter, divided
- 1 large chicken breast or 2 cups diced, cooked chicken
- 1 onion, diced
- 5 garlic cloves, minced or 1 ¼ tsp garlic powder
- 1-2 tbsp garam masala
- 2 tbsp grated fresh ginger or ½ tsp ground ginger
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp cayenne, opt.
- 1 can tomato sauce
- 2 cups cream and/or coconut milk
- salt and pepper to taste
Directions
Brown chicken in 2 tbsp butter and set aside. Melt 2 tbsp butter and cook onion until soft. Add garlic, ginger, spices and tomato sauce. Simmer about 45 min. Add chicken and cream or coconut milk and simmer another 10-15 min. Add 2 tbsp butter and salt and pepper to taste. Serve with Naan and Coconut Rice.
