Lentil and Sausage Soup

  • ½ pound mild Italian sausage
  • 1 large onion, chopped
  • 1 tbsp garlic, minced
  • 1 lb. dry lentils, rinsed
  • 2 cups diced potatoes
  • ½ can diced tomatoes (796ml)
  • 1 bay leaf
  • 1 beef broth (900ml)
  • 3 cups water
  • 2 ½ tbsp Troyer’s Soup 9 Spice


In a skillet, brown sausage.  Add onion and garlic. Sauté for 5 min.  In a large stockpot, place in order, lentils, potatoes, sausage, garlic and onion, tomatoes, bay leaves.  Add spice mix.  Add all liquids and stir.  Heat on medium high until boiling, stirring often.  Cover and reduce heat to a simmer for 3 hours or until lentils are soft.  Add water as necessary.
