Coconut Rice

This rice is a delightful change to regular cooked or baked rice.  Especially good with Butter Chicken and your favorite curry sauces.


  • 2 cups basmati rice
  • 2 cups coconut milk
  • 2 tbsp fresh parsley, chopped OR 2 tsp dried parsley flakes
  • 2 cups water
  • 2 tsp salt



To boil:  Bring water and milk to a boil. Add rice, salt and parsley. Return to a boil. Turn down to simmer, cover and cook for 20 min. or until done.

To bake: Grease a 2 or 3 quart dish or pan.  Put in rice, salt and parsley.  Add milk and water.  Cover and bake at 350* for one hour.

Serve with your Butter Chicken or your favorite meat or veggie sauce.
