
Butter Chicken

- 6 tbsp butter, divided
- 2 lbs. chicken thighs, cut up, or leftover roasted chicken
- 1 onion, diced
- 5 garlic cloves, minced, 2 ½ tsp dehydrated minced garlic
- 2 tbsp garam masala
- 2 tbsp fresh grated ginger OR
- ½ tsp ginger ground
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp cayenne, opt OR
- 1 tbsp siracha, opt
- 1 398 ml can tomato sauce
- 2 cups cream or coconut milk
- salt and pepper to taste
Directions
Brown cubed chicken in 2 tbsp butter (unless you are using roasted chicken) and set aside. Melt 2 tbsp butter and cook onion until soft. Add garlic, ginger, spices, and tomato sauce. Simmer 45 min. Add cream and chicken and simmer 10-15 min more. Add 2 butter and salt and pepper to taste. Serve with naan and Coconut Rice.
