Butter Chicken

Ingredients

  • 6 tbsp butter, divided
  • 2 lbs. chicken thighs, cut up, or leftover roasted chicken
  • 1 onion, diced
  • 5 garlic cloves, minced, 2 ½ tsp dehydrated minced garlic
  • 2 tbsp garam masala
  • 2 tbsp fresh grated ginger OR
  • ½ tsp ginger ground
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp cayenne, opt OR
  • 1 tbsp siracha, opt
  • 1 398 ml can tomato sauce
  • 2 cups cream or coconut milk
  • salt and pepper to taste

Directions

Brown cubed chicken in 2 tbsp butter (unless you are using roasted chicken) and set aside.  Melt 2 tbsp butter and cook onion until soft.  Add garlic, ginger, spices, and tomato sauce.  Simmer 45 min.  Add cream and chicken and simmer 10-15 min more.  Add 2 butter and salt and pepper to taste.  Serve with naan and Coconut Rice.
